My husband and I became vegetarians after a Meatless March challenge almost 4 years ago. What started off as a sort of bet, became a way of life for us. Before we did the challenge I did a lot of research about going vegetarian, the benefits and the cons. Thankfully the benefits are plentiful!

Just going meatless for one day a week can help reduce heart disease, fight diabetes, save money, and reduce greenhouse gases. How awesome is that?

I will say that I personally feel better eating this way and love that it can make me be super creative in the kitchen. Now while I love spending my time in the kitchen creating meals, I don’t always have unlimited time. So, my crockpot has come in quite handy with helping me be creative without taking a lot of time away from my family.

I thought I would share some of our favorite meatless meals that you can throw in your crockpot with little effort!


-Slow Cooker Enchilada Orzo

-Super Easy Skinny Veggie Crockpot Lasagna

-Quinoa Black Bean Crockpot Stuffed Peppers

-Creamy Slow Cooker Potato, Corn, & Jalapeño Soup

-Crockpot Mexican Quinoa Tacos

-Crockpot Red Lentil Curry

-Slow Cooked Sweet Potato Chili (leave the beef out)

-Slow Cooker Red Lentil Cauliflower Curry

-Easy Crockpot Creamy Chicken Enchilada Chili (leave the chicken out)

-Slow Cooker Broccoli & Cheese Soup
